I need insurance for 2 months. I've got a month with current insurer but they won't extend and quick Google suggests everyone wants a trip to start in UK and I'll be in Europe when I need more cover to begin. Lots of insurers seem to only offer a month as well so no good to me if I try to buy for the whole 2 month period. Any recommendations for companies that offer cover?
No pointers for companies, but if you're in the UK now then find someone that'll cover it and take that cover out now including for the entire trip. Cancel the other policy.
If you're already abroad then try a broker.
Afterthought: won't any of the "temporary cover" companies do it if you're already overseas?

Are you on auto renew with your current insurer? If so you won’t have a break in insurance and without doubt you’ll be able two get the documents online.
Current insurance is a few months old all online options appear to be 28 days can't find 2 months worth!

Budget - Car insurance policies provides EU cover for up to 60 days - normally can be extended by calling the company.
Diamond - Policies automatically includes up to a maximum of 90 days in a year in over 30 countries.
Endsleigh - Includes cover in EU for up to 90 days.
Elephant - Includes cover in more than 30 countries for up to 90 days.
Hastings also do 90 days EU cover.

I suspect a new policy might be cheaper than an upgrade or 1 month deal.
When sorting out European breakdown insurance for a 3 week trip buying a full year from Green flag was way cheaper than the AA or RAC. There were cheaper options but they had lots and lots of exceptions and limits and wouldn't cover a 14 year old car.
I think my Churchill insurance only does 30 days per trip cover so no help there sorry.

And then check out the small print on 'repatriation' after an accident/breakdown/attempted theft etc...
