Thinking about using a VW Touran or something similar as a work van. This would mean a more comfortable vehicle for biking trips. I suppose it would have to have fold flat or removable seats, but I'm still unsure whether it'd be big enough? Currently use a VW Caddy.

We've got a Mitsubishi Delica as a multi-purpose vehicle. I use it for work and DIY as a van occasionally and it works well. It'll take an few 8x4 sheets (just). Loads of room in there. Not quite as useful space as a van but better in a load other ways. All the seats unbolt easily but they are crazy heavy, even just pushed out of the way there is a good bit of room. Its basically a camper, people carrier, work van, tow vehicle, bike lugger.

The downsides are:

a car won't go through your books as neatly as a van does

no bulkhead and not much facility to secure your load so in a shunt you'll be hit by all your tools and equipment.

My wife has got a Zafira, which is pretty good for bike and dog carrying duties, but it is nowhere near as useful as a similar or even smaller size van or as easy to pack with bikes and associated bits and bobs.

Our old Kangoo van which was externally smaller than the Zafira, could fit a lot more in it.

I think you might need to get a much larger MPV to get the same storage space as even a small van.

I'm running a Peugeot Expert Tepee Leisure at the mo, which whilst being based on the Expert van; is all carpeted, soundproofed with windows and all the bells and whistles as standard. It's just like driving a large people carrier, but was a lot cheaper than say a Galaxy.
