Bit of a novice making cakes but got inspired by bake-off. Made some flap jack but very difficult to eat on a road bike on the (quick) move. Anyone got a recipe for a torq type of bar with a low fat content?

flapjack with rice crispies; bannana, apple and sultanas works.
egg can be used to bind it.
my mate came up with a recipe - i replaced apple with orange and it didn't work as well.

Thanks MSP, but "organic pumpkin puree" is going to be hard to buy in the Derby area...
so replace the pumpkin puree with squash, then puree the pulp yourself.
You need to keep the fat content up, too. Use butter to help bind better.
Banana & Chocolate Energy bars from the in-house Waitrose paper (2 Jan edition).
2 Small rip bananas mashed
120ml low fat (full fat if you want to up the energy content)
2 medium eggs, beaten
50g clear honey
100g chopped dates
50g wheatgerm
100g wholemeal plain flour
1tsp baking powder
250g rolled oats
3tbsp sunflower seeds
75g dark chocolate, chopped
1. Heat oven to 200C/Gas mark 6. Line a 23cm x 32cm baking tin with baking parchment
2. Mix bananas and yoghurt then stir in the eggs and honey until well blended,
3. Add dates, wheatgerm, flour, baking powder and rolled oats and mix well, Fold in the sunflower seeds and chopped chocolate.
4. Spread the mixture into the prepared baking tin and bake in the oven until browned and cooked through. Cut in half length ways and then cut into bars and leave to cool on a wire tray.
Makes 20.

2 slices of bread, butter, jam.
Add cheese, peanut butter, ham etc.
It's not complicated.

I expect pumpkin purée is available in most supermarkets, just not something you would have looked for before. And in the comments at the bottom she says what spices are in pumpkin spice.
