I've just discovered a nice patch of the little beauties. Other than sauteing in butter and eating on toast, what else should I be doing with them.

This risotto recipe (ignoring the dried mushrooms) made - I think - the best meal I have ever cooked in my life.

Otherwise, fry with onions and then add some sort of cream for a pasta sauce. But the risotto is loads better.
