Pretty much as the titles says. I've a number of backups from various peoples iphones. I'd like to know what version the ios was when the backup was taken. Can you tell?

Don't know - but AFAIK it doesn't actually backup the iOS bit if that is what you are worried about.
So for instance, if you take an iPhone with iOS 7 and restore it from a backup made from a phone on iOS6, it doesn't downgrade the phone or anything.
