I'm looking to get a second battery for my Canon G12 the battery it came with is 7.4V and 1050mAh. I'm I correct in thinking that the greater the mAh the better? Or should I replace like with like?

higher mAh = longer life

Except that most aftermarket replacement batteries make outlandish claims about their capacity

This. And they pack up randomly too. Look at you camera battery, get the code off it (something like LP-E8) and google that code. Then get one from a reputable manufacturer. OE ones will cost a bomb but there's plenty of good branded ones about. For instance, a Duracell one for my 650D is only £14.36 on Amazon.
