We don't have the monitoring service any more, so I was going to disconnect the alarm from the phone line and see if it helps my rubbish broadband. Anyone know if this is going to cause it to go off or otherwise get confused? There is a little connector jack on the main board of the thing that I was going to unplug.

if you dont have it monitored anymore it shouldnt make any difference if you disconnect the line for a while. It may throw up a line fault on the keypad but this should clear when you reconnect it. Be aware some companys leave systems as engineer reset for certain faults, normally these would be turned off on the service after terminating the monitoring but some just dont bother so you have to call them out to reset the system. What control panel is it and what company?
