Having finally submitted to having all my in-laws for Xmas dinner I have just started soaking an 18 pound turkey in a Nigella concoction; has anyone else done this to a turkey and did it make a massive difference?

I do it to chicken (a la Heston), so would definitely do it to turkey too, as it a notoriously easy to dry the turkey out?
MIL has the turkey, so not sure we'll hav chance to do it to ours though

Yes, have brine a la Nigella a couple of times, ours was put on to brine this morning in a brewing bucket.

Brining the turkey via Heston's idiot proof pre made recipe?

I only read the instructions today which suggests a 24hour period for brining the bird.

thought 'brining the bird' was a euphemism..

dunno what it is but if nigella's going to be there, i'm up for it! 🙂
