Ok it’s in the evening such is more complicated. So you need a west facing branch. There are great apps for sun direction on any day at any location

Go to Majorca and rent a boat from either port Adriano or santa ponsa marina, head out towards malgrats islands. You'll get a completely unhindered view.
I bet there will also be organised boat trips you can book onto.
The sea, or somewhere high along the tramuntana mountain range is going to be the best place to see it.
I'm doing some digging about this. Concern is that across northern Spain it'll be 30-40 minutes before sunset, so unobstructed views of the western horizon are required so hilltops and plains are best (not just looking up). It looks pretty flat around Valladolid and Burgos - should it be easy to get views of the horizon around there?
