We've had our Trimco Zurich serviced and the man activated an automatic defrost mode. Previously we just turned it off ourselves if it was frosting up. Now it's turning off every 6 hours which isn't the best with the weather as it is.
Can I make it manual again?

Easily programmable. From a distant memory, they give defrost intervals in hours, so would be set a t 6. If it's not opened often, intervals of 12 would probably be fine. Defrost periods really depend if it's off-cycle or has a heater. Do keep a regular defrost cycle in though, it will improve efficiency, reliability and durability.

This is the Dixell manual for the controller you have and is little more user friendly than the thermofrost cryo document:

As mentioned above though, keep a regular defrost, even it its once daily

Shall try and set it to defrost once a day about 2am. The chocolates don't like to get too warm.
