I can't find this anywhere on Google. I have a Samsung Galaxy S6 and when viewing photos I have a star in the top right corner. If I tap it it turns yellow so I'm guessing it marks it as a favourite? If it does how do I view my favourites?

There might be a folder in your file system for Favourites...might also have an option in your gallery to show/hide favourites.

That's it! Thanks! I don't normally access images a through the gallery app so didn't know about that.
