I was looking on http://www.actionsports.de at their groupset prices which seem pretty good. I notice that they say you can't use the 11-36 cassette with the 3 ring chainset.
Does anyone know if this is right? I've not seen info about this anywhere else.

I think they are warning that if you have 3x10 with 24-32-42 and 11-36 the range is 43T which is 2T beyond the claimed range of the XTR rear mech at 41T.

I'm not sure that the "range" means.
But if the implication is that you can't run the chain from the 36 to the 42 then that's fine. You'd have to have the mechanical sympathy of Jeremy Clarkson to do that on a 34 cassette anyway.
It's only actually the 36T ring on the cassette that is any bigger than on the 11-34 cassette. I tend not to use the bottom 2 or 3 ratios on my 9 speed setup with an 11-34 at the moment anyway.
I think one of the points of having a 10-speed setup is to run in the middle ring for more of the time, so not using an 11-36 seems to wipe out that advantage.

Range is the capacity of the rear mech to take up the slack in the chain.
If you install the XTR 24-32-42 chainset and the 11-36 cassette with the correct length of chain to run the 42 and 36, then the mech will not take up the slack with 11 and 24, which as you say is not a viable combination.
You should be fine.

So, really new shimano 10 speed is designed to use the 11-34 cassette with the 3 ring setup. These rings have a smaller range, now 24-32-42, so we actually loose ratios top and bottom.
Have I just got that wrong?

XTR rear mech has 41T range, but the XT M773 SGS (long cage) has 43T.
So, fast XC whippets on XTR should be on 2 rings or 11-34 or closer ratio, but all-day riders on XT can have 3 rings and 11-36.
With the new 36 and 24 bottom gear, it is actually very similar to the old 34 and 22. 11-36 also meets the needs of the 29ers with the old 22 granny ring.
I actually have an older 12-32 XTR 8-speed with a Sugino Mighty M900 20-32-42 5-bolt chainset. Bottom gear 32 and 20 so again very similar.
Range is 42T is well within the 45T range of an XTR M960 SGS mech.
