Right, with out getting into the merits of nipple material. Brass vs alloy.
What about nipple length? Does it matter if you use 12 or 14mm nipples?
I'm thinking about getting some LB rims for my next build, but want alloy nipples to match my hubs.
I can only find 12mm nipples in the colour I want? Will this matter if the spoke length is correct?

It can matter. Depends how much thread you have on your spokes, I believe. It will probably be fine. With the 14 mm nipples, I generally use 1 mm shorter spokes.
