Riding around lately it's so wet and boggy I doubt any sealant would work.
Previously I did get a puncture from the tyre liner itself, but that was when I used to use one set of tyres all the time for ages with no change. Nowadays I'm like anyone else on STW with a set of tyres to change out with for every season if not sub-season or whim. So that eliminates that issue for me.

If you're a commuter, and sharp flints or thorns are the issue, largely I'd agree that a thicker line of defense is a better option (though I'd suggest a Schwalbe Marathon as tyre liners really are a rubbish Heath Robinson approach to fixing this problem). But for Mountain Biking, no chance. Tubeless with some sealant in is lighter, there's no tube to pinch which is the biggest deal for many, and if anything it's less of a faff than refitting a tyre liner that doesn't want to stay in one place when you change your tyres.

You should be using solid rubber tyres - they will float in the wet weather and never get punctures.

Sticking to the technical side of things - I thought sealant inside a tyre was there to seal a puncture which occurs from the outside of the tyre. It was my understanding that the sealant needs to solidify by drying to seal the puncture. If the tyre is rolling through a wet muddy bog it likely won't get to seal. Am I incorrect?
I definitely noticed this with Slime tubes.
Pinch punctures only happen to those who underinflate tyres or do enormous rad big air landings.
As for faffing with centering liners, it's not a big deal and is probably less of a hassle than swapping out tubeless tyres.
PS: 'long' stems were the norm in the 90s when MTBs actually used to handle well compared to today's slack rubbish
