Can you re- use tubeless sealant? I am changing a tubless tyre and was going to take the old sealant out using a Caffe syringe then put it back in the new tyre with some other new sealant as a top up.

yeah you can, done it loads, as long as its not conjealed (spelling?) togther, ie, clumps of stuff then it will be fine, if its full of mud and the likes id just chuck it, have had some occasions where i guess bits of mud have gone in punctures etc or tiny gaps before sealing.....but generally ive used it over and over!

Ptobably a daft question but does it come out of the valve OK?

If you remove the valve core you can inject it, I doubt you could draw it out that way. Just deflate the tyre, unbead it, then scoop or suck it up, and put it in a pot until you put the new tyre on.
