Hello,
we are in the area with our bikes (but without water proof or mud-ready gear unfortunately)
it rained relentlessly all day yesterday and even heavier into the night - will Thetford be a write off?

Not a write off. It gets bad if ridden a lot when wet, say during a race. There may be some large muddy puddles, but avoidable.

Rode there yesterday in the rain, trails were grippy and not muddy. I was in shorts and t-shirt all day. Did 77km too 😉
