My Mongoose Canaan is fitted with an integrated headset - am I limited to using this type of headset forever, or can I fit a "regular" one?

Your best bet is to contact Mongoose to see if it's possible/desirable.
Your next step is to rush forthwith, credit card in hand, to Chris King for a titanium replacement!
