Went out today, pedal felt a bit weird and then it fell out.
When I looked the thread was missing on most of the crank. I tried the pedal in another crank and it was ok.
What are my options if any other than throwing it in the spare parts ?

A decent bike shop could repair it with a helicoil - a threaded insert that gets tapped in. Can work well but whether the cost of the repair would be worth it I don't know - second hand xt crankset prob not too expensive?
I've had this happen to me, if the pedal came unscrewed, then there may be enough thread left for a salvage. Try screwing the pedal all the way in from the back. this will tell you if there is any thread left and it might rethread/ tidy up the thread enough so you can screw it in from the front. If you're successful (persist), I was, obviously you need to put those cranks on a bike where you aren't going to be taking the pedals off very often

Same thing happened to me, non crank side, half way through a day at Antut Stiniog. Well half way through for everyone else....... Day ruined and had to buy a full new crankset at top price from a LBS as it was the first day of a 3 day break..
I do how ever now own a 2x10 xt crank side arm (non stripped, chai rings removed) in my bit box, if you go that way. 🙂
Definitely a helicoil. My son being a teenage smartarse decided to borrow my bike while I was away but having no spd shoes decided to put flat pedals on. Being a teenager he stripped the thread in the crank because despite knowing everything ever known he didn't know pedal threads were opposite rotation.
It cost £10 at LBS to helicoil a good few years ago and it worked fine until stolen.
if you don't go for the helicoil, I'd be interested in the non-driveside arm, if it's 175mm.
