I want to use square taper drive.
Can I buy a shimano double/triple crankset but only have the 32 chain ring attached?

Yes, but best bet is to pop on a one speed specific ring with its tall teeth.
You will also need skinny 6.5mm bolts to hold a single ring..

And then sell all the leftover bits on eBay.
