I have a non flat mount frame and fork so flat mount calipers won't fit. I'm nearly certain my force cx1 calipers (old 11 speed levers) will work with apex 12 speed levers ie is there any difference in lever pull or anything?

no there won't be any difference and they'll work fine. BUT, check out aliexpress for ZRACE flat mount caliper to post mount frame & fork adaptors if you don't want to seap calipers around. Just check frame clearance.
