Presumably being shimano, the MT65 wheels have cup and cone bearings?

Does anyone have any idea how well sealed they are and how easy to service, compared to say XT hubs?

This axle assembly shows they have seals, I don't think they are the lip seals (as on at least older lx, xt and xtr, 105-dura ace and probs slx and saint), so dunno re. seals but cerainly cup and cone.

It doesn't look like the axle assembly includes the seal rings, these are a separate item. But yes, there are seals on the wheels.

Those seals do not look as good as the ones on older Shimano hubs - not sure what current ones come with.
