I’m looking at a Diverge E5 as a sort of winter bike but I’d like to upgrade it to AXS. Seen a couple that have Shimano 2x8 speed with cable disc brakes and Shimano 68mm threaded BB. I’m no BB standard expert at all so is it a straight swap to a SRAM BSA DUB?

Yep, straight swap. Just pay attention to the correct number and position of spacers. SRAM have a good pdf showing what you need:
