I want a saddle bag/carrying device to put hold/secure 29" tube, a multitool, chain link and a dynaplug, that won't impede the operation of my dropper post... something quite minimalist.
Does such a thing exist? Are you using one? Please regale etc

It's been on my to-buy list for ages, but as ^^ says, weecog slider is what you are looking for.

Weecog slider is what you're after. Customer service is amazing and it's very secure when attached. Fits pretty much everything you need. However......
I swap the saddle bag between bikes and it can be a faff. I've also had to send it off for repair as eventually the retaining strap has worn through.
I've since moved on to a bontranger pro quick cleat.
It's much easier to swap and doesn't foul on the dropper. It's also waterproof.
As much as I want to support weecog (I'll be ordering a frame bag for my shand hopefully), the slider just want for me.
I use a small ortleib one on the (dropper equipped) gravel bike, which works well.

I use a small frame bag for this instead. You can access it easily without getting off the bike and it doesn't get coated in mud (as much).
+1 for the topeak DP mount.ย You will lose around 10mm of dropper movement but a small price to pay for the convenience.ย I tend to leave it on all the time just as somewhere to put my rear light.
Could also use an old sunglasses case in a bottle cage for carrying spare tube, tool, etc.
Remember to check your tyre wont smack into it at full compression - that's definitely never happened to me....
Tube and a dynaplug? Be brave and ditch the tube!
I keep my dynaplug racer in my hollow crank and tool etc in a Lezyne flow bottle cage thing.
That topeak dp mount looks like what I'm after for my ortlieb saddle bag for bikepacking. Anyone tried putting a bigger bag on it, say 8 to 12 litres?

Sweet! Was going to bodge an old rack and fit cages to it just so I could still use my dropper. Might not need to now.
I have a Dakine hot laps gripper. I started with it at the seat/top tube junction, but a few knee scuffs later, I whacked it under the saddle. With the strap cinched up tight, the rear clamp bolt keeps the pack well away from the slidey bits.
Used to have just a Louri strap, but the minimal wrapping on the HLG keeps the muck off, and things just a little more organisable and easier to hand.

The mount screws onto the saddle rails, works fine, doesn't strap to the post. Eventually falls apart after about three years of regular use and it jams onto the mount over time, but I never take it off anyway.

Castelli do some very nice small bags that just fit to the rails.
I have the Ortlieb one recommended above, have had it for about 7 years or so now, no zips to go wrong or jam up with mud and fully waterproof.
I've also got the small Apidura expedition tool pack, holds the bits you've mentioned and snugs up tight to the saddle rails and works perfectly with a dropper
