Ok, so over the last few years we've done:-
Southern Spain
Turkey
Les Arcs
Molini (Italy)
Megavalanche / Alp d'Huez & Les Deux Alpes
Morocco
Looking for either somewhere different or something with an event thrown in. Passportes du Soleil is one thought, but heard varying reports.
Any other thoughts or company recommendations?
San Remo with the Lifecycle crew, headed up by Manuel Ducci is a good bet:

My 2 choices if I manage to get away;
Web site is being updated for next year
Did this last year and would go back http://www.mountainbikeparkchatel.com/
This is reportedly good http://www.bikeshuttlestation.it/
Passportes du Soleil is a grand day out in the mountains and makes a decent start to a week in the area - given what else you've done (esp Mega) I would hesitate to recommend it as its very lame in comparison.
Trail Adiiction Destination X - guided week on natural trails - you'll see very few other mtbs
Tour Mont Blanc
Chamonix/Verbeir
Have a look for a European enduro event and base yourself around that. There is a casual "very mini" Mega in Lenzerheide in August. Riding around there is pretty good with some big days out possible if you don't mind some hike a bike and getting train / bus back if needed.
If you don't mind an xc style event why not do someof Cristalp, there are shorter versions of the main event. Then do Chamonix/Verbeir.
We did Andorra this year with Singletrack safari.
Hotel was excellent, guide was excellent, beers and food was cheap
It's pretty steep there too and rocky.
You wont go far wrong with Bike Verbier
Andorra is ace, there is a Maxi Avalanche early in the season and a second one in September if you want an event. However, early or late means that the top lift is only open on weekends.
A park trip taking in Granvalira, Valnord and La Molina is easy doable without paying a holiday company.
Having done Megavalanche doesn't mean I was very fast or competent! Looking for trails on trail bikes (140 -160mm), possibly bike park but not full on DH.
Went with Trail Addiction at Les Arcs - very good - thanks for reminding me of their 'Destination X' option!
I think one of the group will be more interested in uplifts than too much pedalling uphill.
