Can I run a 185mm hope rotor with a 180mm shimano front brake set-up?
Would adding a couple of washers between the caliper and mount be acceptable?

I hope so, I did the same with the wife's bike. Hope 165 rotor on the rear with Avid Juicy 5s and some washers to space it out. She's not died yet!

Aren't avid 183mm though?
Hence a bit closer to the fit?

Yep. Only need 2.5mm of washers.

Due the angles involved, it will take more washers than you think but a bit of trial and error will get you there.
