What do you guys use? a roubaix type overshoe with waterproof socks?
or full waterproof overshoes?

Neoprene overshoes are best

it clearly depends on the temperature... when it's cool and wet (like today) then thinner more waterproof overshoes are best (they don't overheat your feet and make them wet from sweat.

when it gets proper cold (below 3degC ), then as trekcol says then neoprene are the best.

I've found the Pro Tarmac H20 and NPU ones to be very good, better than anything else I;ve tried over the years.

Yesterday all the riders I was with wore overshoes, from full on winter neoprene jobbies to those daft over-socks. All of them had wet feet by the end of the ride.

+1 Pro NPU. For reference, size large are at the limit on Shimano 42 road shoes.

sidi thermal neoprene here. Very small sizing though. Best to get atleast 1size up to be able to get them over your shoes.
Excellent though. Feet dry & warm.

nobody recommends Gore versions then? in particular the windstopper xenon or the basic model - which is a roubaix material I think - with some waterproof socks?

If it's really cold/wet then Pro Tarmac NPU+ if it's a bit milder than Lusso Max Repel (roubaix type). It's not about keeping your feet dry, it's about keeping them warm.
