I'm trying to book a return flight to Pisa in october with easyjet/Ryannair but the timetable only goes up to Oct 24th so I can't book a return flight. Anyone know when the next timetable usually comes out?
The airlines are no help.

They might stop flights after that date. if you check the flights to other Italian airports and they have timetables past that date it probably means they will not be scheduling any more for that particular airport.
