Most of the contributors to bikepacking.com have very good blogs, particularly Cass Gilbert and Joe Cruz. I'd also recommend tales-on-tyres.com and Ryan wilson's stuff on the Radavist.
I enjoyed reading Paul Lasenby's blog over the last year or so about his mega tour of the Far East.
