What am I doing wrong?
All the online videos show fitting these to be a piece of piss, whereas I’m finding it impossible.

I’ve snapped 3 tyre levers already. Im using soapy water and can’t get the last 6” of tyre on. Any top tips or should I buy longer metal tyre levers?
Make sure the tyre bead is pushed as far into the wheel well as possible to give enough room to get the last bit of bead over. And buy a cushcore bead dropper tool. I had the same issue with Schwalbe super gravity tyres and rimpact inserts, the bead dropper got it done.
Don't get a metal lever, you'll either damage the wheel or the tyre.
Yes I’ve got the opposing bead all the way into the well. The tyre is an 2.6” width so quite big volume too. Isn’t that cushcore tool just a big tyre lever?

Yep, pretty much. But it won't snap like yours (and mine) did! Makes it so you're not ruining your hands.
Fitted Nukeproof ARDs no problem in a few tyres.

I find it's all about getting the tyre beads into the rim well, I grab the tyre and pinch the sidewall either side under the insert, you need to get under the insert so it lifts away from the rim and the beads can fully drop into the well.
Bead dropper is the way.
On mine, I'd already got the tyre bead into the well but needed a properly beefy tyre lever to slide in the extremely tight last few inches. 😲

No, sorry I don’t know what you mean. The insert fits the rim like a glove, there’s no slack at all; the opposite side tyre bead is well into the well of the rim, underneath the insert, which means the insert is held fairly tightly in place; this is the problem, there’s no slack or room for movement.
Are you pushing it into the well of the rim multiple times? Start at the opposite side to where the tyre is still off the rim and push the beads into the well of the rim. Work your way round each side and you should be able to get the tyre on a little bit more. Keep repeating this and the stuck bead should slowly get onto the rim.
When I did this with Cushcore, I aimed to have the line on the tyre around the bead (the line that sits just above the rim when inflated), fully pushed into the rim bed so that you couldn't see it any longer. Doing that is really easy with the cushcore tyre lever and it meant I had no problems getting that last bit of tyre onto the rim.
It's not necessarily anything to do with the insert, some tyres and rims are a royal pita.
Have you already mounted the tyre on the wheel and inflated it without the insert?

Once that side is on it sometimes needs shoving up to the wall to avoid the trouble you're having. Mounting the tyre and inflating it without the insert then deflating taking one bead only off and putting the insert in from that side can help with that.
I found this video on stw in the past and have found it very useful. It's just pinching the bead into the middle as others have suggested above, seems obvious but it does really work if you're patient, which is what the video stresses. I've had combos that I thought impossible that have now moved to tyre-lever free now I know what I'm doing.
That video makes it seem very easy, but (yet again) it's using trail casing tyres which frankly don't look that hard to get on. You can see how flexy the sidewall is when he's mounting the tyre.
The technique does work, but sometimes you need assistance from a burly tyre lever to get the last bit over the rim.
