Probably been discussed loads of times...
I'm wanting to use some 165mm XT M8000 cranks in my boost 12mm x 148mm frame.
Has anyone done this?
What issue's (if any) did you encounter?
How were they solved?

It'll probably be OK but there's no way of knowing for sure unless someone has the same frame (and size of frame) as you as you may get a clash with the chainstay.
FWIW I run non-Boost cranks on my Boost Orbea Occam.

It would be on a Nukeproof Scout 275 Small.
Boost chainline is a 3mm wider, so you'll probably have reduced chainring / crank clearance with non-boost chainset - most frames you expect 8-10mm clearance anyway. You can get offset chainrings to compensate
I use my boostable cranks in non-boost mode on most of my boost bikes.
I can use non boost cranks on my boost spark. I can't use non boost cranks on my genius as the ring won't quite clear the chainstay
It seems very much frame and cranks dependent as to what works.
To add. If its an m8000 double chainset then you might be fine.
The new Nukeproof (2021) Scout 275 Pro had this crankset:
Crankset: Shimano SLX M7100 12-Speed, Hollowtech 2, 170mm, 32T, 52mm Chainline.

It is my understanding that Shimano use the 52mm chainline with 142mm (non-boost) frames, therefore I assuming the older 11sp Shimano Cranksets i.e. the M8000 and M7000's should fit...

I ha this problem when I had to warranty my 142x12 swingarm on my Ibis Ripley 2. Ibis only had 148x12 boost swingers so I was warrantied one. XTR non-boost cranks didn't work so had to buy a boost crankset, which was a bit of a bummer as Io had only recently replaces the XTR cranks that were on there due to wear. But as above, you need to try and see and hopefully you are lucky.
Non boost single ring M8000 in a boost nukeproof mega works with Burgtecs asym 96 chainring 34 tooth because it doesnt have built in offsets, its flat like a normal ring.
Its gives a 52mm chainline. I'm running those cranks with M8100 12sp set up.
Other brands of chainring, no clearance.
I've got XT non boost crankset on my Voodoo Bokor which is boost. Never noticed any issues. With Shimano it's the crank that is boost not the chainring. If it's causing problems I expect you can shim the chainring out a couple of mm or get an aftermarket chainring with the boost offset.
I got mine as they were on offer and significantly cheaper than the boost equivalent.
