Being impatient is there anything around with easily serviceable hubs that don't weigh a ton ?
How narrow? Presume you need 12 or 15* front and 142mm rear - have a look for some horribly untrendy non boost XC wheels. As generally whats deemed not good enough for XC these days actually means its just about perfect for a gravel bike.
*(You can sleeve a 15mm down to 12mm)
I need Boost hubs . I've already got some non boost and the adaptors are a pain in the bum.
Ah, yes I see now I've read again. Not many gravel bikes that need Boost Hubs... I think you'll struggle in that case! Wide hubs=Wide rims generally!
How narrow is narrow? There's loads of 19mm internal width XC rims kicking about
