What iOS apps do people use to follow a .gpx route? I only record rides on Strava, rarely follow anything but I'm on a longer ride in a few weeks in Foreign Lands that it appears maps aren't being supplied for, but route files are available. Might be handy here too. Thanks!

Used Galileo maps with gpx, also maps.me with the gpx converted to kml!
Nether navigate a gpx, but do display it on an offline map for reference with no signal!

Note Like you OP I usually use the phone just to record. I think you can upload to the iOS OSMaps app (excellent btw) but I find it has a very low point count limit so don't use it for that

Pocket Earth is good as it can download maps for offline use.
