OK in a nutshell:
Long road downhill, big ring front, smallest ring back, peddaling fast, 30 odd mph. Then, stop peddaling (so my knees don't unscrew), but although the cranks and big ring stop turning, the cassette keeps turning, feeding chain through towards the big ring so that it lays on the chain stay, then when I start pedalling it takes a second to take up the slack and clatters noisily, scaring the bejesus out of me!

Frozen freewheel?
Sounds like the freehub is sticking, what rear hub are you running?
Freewheel not working properly - if it happened today (ish) it may just be frozen.
Badly worn cassette gripping chain.
Mixture of 8/9/10 speed bits.
knackered/needs servicing freewheel.

as above it's usually dying bearings in the free wheel (if cart bearing hub) or water in a cup and cone freehub body freezing up. New bearings or a hub service should sort it.
It says Shimano FH M525 VIA N on the hub, which according to google makes it a Deore, although it doesn't say Deore on the hub itself. The bike is a Specialized Epic with Deore disk brakes, LX shifters and an XTR rear mech - so anything is possible.

With those you don't really. You just buy a new one. (you can get the working again but if you're asking this question it's probably not the job you'd want to do)

Well just in case, the best way to try and free it up is to take it off the hub (10 mm Allen key once the axle is out) then soak it with penetrating oil like plus gas or even wd40. Note, if that does work you'll probably have to keep doing it as you'll have washed the grease out.

we've had this happen on group rides and had a selection of people peeing on it so the rider could limp home.
Oh! I've just realised that you guys may have meant "frozen" as in "below 0 deg C", I thought you meant mechanically frozen LOL
It's 35 degrees here when I ride - nothing much freezes here except the ice cream I keep in the freezer for my after ride cool down.

I will still try stripping it down clubber - and bear in mind what you say about losing all the grease. Maybe I can keep it going till I can afford a new one!
Mine has been having some trouble recently in the lower temperatures. Haven't gotten round to sorting it yet, but I'm going to replace the freewheel anyway.
Don't lose all the ball bearings! Do it over a tray or something to catch them all when the inevitably fall out ๐
