As above, is there a simple way of making a list become column headers.

not sure what you want, but if it's data in rows that you want in columns, copy, paste special, check 'transpose'

if you want it dynamic then use the TRANSPOSE function (an array function so enter with CTRL + SHIFT + ENTER)

Step one done, thanks. Step two, I have a third column, think x,y grid with a value to plot on z acids. How do I get that value to the right place in the table?

Depends on your id data, but s combination of MATCH, ADDRESS, LOOKUP, INDEX etc would do it.
