I had this issue last week. Done a search and saw a few tips -

Use a dremel and cutting disk - rubbish the heat makes the plastic core swell and expands the metal brade.
Use a hacksaw - same issue as above, plus takes ages

I used my park wire cutters but made sure that the hose remained in as much of s straight line as possible when cutting. I also used a screwdriver to hold the olive open a little more when I placed it on the hose.

A new Stanley knife blade. Work your way around the hose. Keeps it neat and stops it deforming the end.

Hose or cable cutter will give you a tidy finish.

A decent set of cable cutters is all it takes.

Put olive on first then cut the hose with a decent set of cable cutters.
