As above I'm running a 38/24 up front and a 11/36 rear also have a stinger chain guide
But the chain slap on descents is driving me mad, my rear mech is a non clutch long xt and my chain is 114 links
Is there a way to work out how many I can remove without causing problems

Best thing to do imo is just to try it- if it's a full suss, let the air out or remove the spring and cycle it through the full travel in the worst gears.
You can go shorter than that- just as long as you never bottom out the suspension in the too-short configs. Wouldn't do that myself, I'd forget, shift into that gear and rip the mech off guaranteed. More innertube/velcro?
Doubt it. Get a clutch mech - bloody brilliant. Usually big big with the mech almost at full stretch then let all air out of ze shock to check nothing will go snap
Northwind , funny you say that, just before I read your message I was fitting the Crap chain protector I got in a mag a few weeks ago, lasted about 2 seconds with a good stretch I ripped the Velcro clean off the cheap crap.
