As title

Have a really nice set of custom built pacenti cl28 on hope XC hubs on my gravel / winter road / commuter and wondered if there is a way of going 11 speed on the back?

An 11spd shimano / sunrace mtb cassette will fit straight on as will a Shimano 11/34 11spd road cassette

Yep 11 speed shimano uses the same hub as 9 and 10 speed

11-42 tooth SRAM ones will fit too (as well as 11-50 12 speed stuff) if you want to go 1x

Considering 1x and using it for a bit of bike packing as well.

50% right.

11-speed Shimano (and compatible) MTB cassettes have the same freehub width as 9 and 10 speed, and are interchangeable, so the OP should be fine with an 11-speed Shimano MTB cassette.

Shimano 11-speed road cassettes will not fit, however, as they require a fractionally wider freehub. Some freehubs can be filed down on the inside edge to accept the wider cassette, but many can't. You can quite often source a new freehub for a not insane amount of money (e.g. £20-ish for Novatec), but I'm not sure what you'd be able to get for older Hope kit. An 11-speed Shimano road freehub is compatible with both 9 and 10 speed road cassettes, as well as all MTB cassettes up to and including 11 speed, by using a small spacer on the insider (spoke) end of the freehub, fitted before you slide the cassette on.

If you'd actually read my post correctly @daern you'll see that I specified an 11/34 shimano 11spd road cassette. This will fit.

Ah yes, of course it will. That's the oddity cassette with MTB spacing. Yes, I did indeed miss that - good correction, thanks! To be fair, it is the /only/ road cassette that will fit though!
