As above - thinkign of a new Pro 2 Evo/Crest Hope Hoops front wheel.
It comes with a 15mm adapter, but my fork is 20mm - can I use the old 20mm adapter from my current non-EVO Pro 2 Hub?

I think so (IIRC) but I am sure someone will confirm?

Yes old 20mm will fit /voe.
I think I read somewhere the front hub is unchanged.

Front kits are the same, rear requires the specific evo kit.
