I have a 1 1/8 steerer fork and I have a tapered head tube - with a 44mm upper,56 mm lower (Transition) frame which requires an [b]internal[/b] headset. Can I choose from Hope's pick and mix range, if so which top & bottom cup do I need to choose?

Think 2E would do it. You can check their tech sheet here:

You need the E and 2 cups with the extra 1 1/8->taper adaptor, assuming you want these for a 2013 covert frame.
