Can anyone help me - I need to fit Hope Floating rotors 183mm (or at least trying to) front and rear to a 2010 Lapierre X Control 500.
The bike is currently running Formula RX The One 160mm rotors.

Is this possible with mounts is anyone out there running this combination ?
Should be possible, you'll just need 183mm adapters. Whether there might be any issues with the rotor spiders fouling the calipers, I don't know.
yeah rotors are specific to their relevant mount, i.e. get hope mounts for your hope rotors and you should be fine (cross brands do work but not guaranteed).
Formula however use quite fine tolerances I know I had to swap to Formula rotors when I upgraded my brakes to THE ONE's a while back as they fouled on the hope floating rotor rivets. But my team mate runs hope floating with his R1's fine. So you might get away with it. There's only one way to find out.
