Winter approaches and I will again be wearing something more akin to a hill-walking boot for much of my mountain biking. The Sanderson pedals I've been using work well with Shimano AM41s but I need something with more/better pin placement. I'm not looking for something wide - my narrow feet seem to sit between the pins on wider pedals leading to poor grip.
Any recommendations?

A cheap pair of approach mids and V12s have always worked fine for me. I stick with cheap boots because I won't be doing much walking in them anyway, and the pins make a mess of the soles.
