When i've done it with a proper press it's been one at a time. I believe the homemade presses often do both together.
Both ways seem to work just fine.
One at a time - nice and slow, use grease.

If you're using a specific headset press that shouldn't be a problem. I usually install mine that way.
Last time I installed a headset I tried doing the top and bottom cups separately and managed to jam the tool in the bearing cup. A lot of hammering and swearing followed...
If you wanna be flash do 'em both at once but it's easier to cock up so slowly, one at a time, is easier.
Use anti-seize compound (like Copper Ease), if you have it, but grease will do if you don't.
When using a proper headset press I do both at the same time.
With threaded bar one at a time as it was easier to cock it up
I think the cheaper Park Tool headset press is little more than a threaded bar

Not according to Spesh UK - IIRC they've previously reckoned they've seen ovalised headtubes as a result (I specifically asked after a Pig DH wouldn't go in quite flush). But argue amongst yerselves if you like..
No grease - Done it loads with the cheaper headset presses - both at one - inly had a problem with one - went it sl slanted. Stopped, popped it out then started again and sorted 🙂

I do one at a time; leave the second cup in the freezer until the last minute.
I do one of a time as it simplifies things and allows you to make sure each one goes in properly. With a tool it's quick so it's not like it will take you ages either way.
I've got a length of M12 bar, couple of nuts and some large c washers. I do top and bottom at a time. Easy enough.

yeh - sorry bad typing - only had a problem ever with 1 headet but I did not align it properly - all fine after readjusting 🙂 It's not rocket science 🙂

Well, IIRC the (mechanic/support) guy at Spesh reckoned it allowed a bit more movement which is why they'd seen some problems. I'm just relating his advice - I think I'll go with that in the absence of any well-supported argument otherwise. Plus there shouldn't be any need to use grease if everything's reamed/toleranced correctly. As I said, argue amongst yerselves, makes no difference to me. Cheerio !
I've never used grease.
I can see how it might allow the cup to go in a little further than you might want it to when not quite straight but you'd have to be pretty daft to keep pushing. Start again and line it up straight.

If a pig headset nearly went all the way into a headtube then why would it stop before butting up nicely? do specialized recon grease is the answer to this problem? hardly.
yes, a 1.5 cup can be a bit of a mare to press into some frames but its most likely to be a cup with a non square edge thru design (quite often you will find a round in headsets in this area where a square edge would be a bit handier - especially if you have to go about chamfering the internal edge of a ti frame headtube - GRRR!)
