My frame appears to be a zero stack 44-56 headset however I want to fit an angle set, they only appear to come with an external cup upper
I’m assuming it would fit so long as there is enough steerer to accommodate the extra stack (there is I’ve checked)

Yep, assuming it's not an? integrated? (cupless thing) headset, zs is the norm these days and works perfectly with angle sets. In bluepeter style, here's one I prepared earlier
As you mention, don't forget the additional steerer length required though.
