How much distance & climbing?
I was out that way on Saturday - cold but drying nicely, this is Porlock bay from Hurlstone point with Horner woods in the middle distance.

Snaps

Staying in Minehead and want to ride from there but not including North Hill or the hill back of periton other than on way back.

Say 30miles not bothered about height as long as its not excessive.

Do you have GPS? I've got some cracking 25-30 mile loops in the area.
We might well be out that way over Easter - weather dependant!

Afraid no GPS. Still using the good old OS Maps.

We're coming down April 16th-18th.
