As per the heading are the pros all on plus sizes or are they using 2.35's?

Depends on the track, some DHers still regularly use 2.35's.
Between 2.35 and 2.6 - Graves can sometimes be seen rocking the new 2.6 inch Butcher Grids, that is pretty much on the extreme end of the width though.

That is Spcialized 2.6 which is smaller than other 2.6" measures though...
Plenty seem to be on the 2.4-2,5 sized maxis though I swear my 2.4 ardent is bigger than the 2.5 Minion on it.
Roto might be an exception on the EWS as it's not rocky but non seemed that keen on anything plus until it stopped failing.
