Looks like there is a fairly widespread problem of workout data not updating challenges. If you're experienced this it would be worthwhile reporting it through the Help system so they are aware of the scale of the problem.
It does seem as though Endomondo is getting a bit beyond it's capacity, as this has been getting slowly worse.

My last ride's been added to my challenges now.
I don't know if I got preferential treatment because I posted their forum or if they've fixed the problem.
