Spesh tubeless tyres are good value for money the last time I checked, never owned a pair myself though.
BUT you don't need UST tyres , you can use must folding tyres with Stans milk and they are always cheaper .
Maxxis non-UST work well tubeless apparently. 18Bikes have [url= http://shop.18bikes.co.uk/products.php?plid=m11b0s399p0&tbv=_WHEELS_Tyres ]CST tyres[/url], which also seem to be working well according to Simon.

If you struggle to get the tyres up then using a CO2 canister usually pops the tyre up nicely, or use a compressor if you have access to one.
Are you sure you want UST? My tyres are half standard, half tubeless ready, but none are UST- I just didn't find any useful benefit from the ones I used.
The Spesh tyres are, as already posted, fantastic value. Certain non UST tyres will seal well, the majority of con tis for example, won't however.
With regards to C02, if you have sealant in the tyre (certainly stand) then a C02 inflation will turn the sealant into a solid with the consistency of silly string and won't help you out at all
Fishandchips, I've heard about CO2 and sealant interacting like you describe, but I've always made sure that the valve is at 12 o'clock position and sealant is obviously then at the bottom of the tyre, hence no direct contact when inflating. And I am of the opinion that it is more the freezing temperature of the CO2 rather than the CO2 itself that 'curdles' the sealant.
