As 2POC says there is a lot of good stuff in the book.
During July and August a lot of the stuff in the valley itself (so from Les Houches up to Le Tour) is closed to bikes, so it's not the best time to visit.
Stuff above Servoz is very good, and not affected by the ban, there is also some good stuff heading over into Switzerland.
Is there any riding above Le Tour that isn't affected by the ban, Lac De Charmillon or the border run from col de Barme, we were thinking of heading over for the day in a week?
Last time I was at Le Tour in high season there were so many walkers on the Posettes and Charamillon trails you wouldn't have wanted to bother anyway.
You've also got Pila bike park and La Thuile (steep and rooty) through the tunnel on the Aosta side, within easy day trip range if you've got a vehicle. EWS is at La Thuile this weekend though so it'll be quite busy!
tonnes to ride during the bike ban. All of the back side of Le Tour is unaffected, either due to being in the Vallorcine commune or being in Switzerland. Posettes is most definitely out of bounds during July and August though, and as elliptic says, too busy with walkers to be worth it anyways.
Brevent is open for VTT from 1615 in the afternoon this summer, though only to ride the Charlanon trail.
Les Houches is where the cool kids are at in Chamonix these days, lots of trails getting built, all the natural stuff there too with only really the GR5 from the Bellevue lift off limits as the Les Houches commune version of the Chamonix bike ban is only on the "grand" trails, i.e. the Tour du Mont Blanc/GR5.
