Putting a 32 on the front and 36-11 on the rear. I fear my legs and the hilly Peak District will keep me in the easier Gears at the back for a lot of the time.
What options do I have to ensure the chain line reflects this ( or does it not matter?)

It doesn't matter. The big cogs have a slightly worse chainline anyway but they have a lot more teeth to spread the wear over.
