I am building an 80's road bike, but there are a few jobs I can't do or don't have the tools for (fitting campag bb, headset, re-chasing the thread on the forks, wrapping the bars)
I asked the LBS how much to put it together for me and they said £100
I would have thought it would take around an hour to do for an experienced mechanic

An hour for all that seems a little tight - possibly done in a morning. Seems a fair price considering you don't have any of the tools.
A little steep maybe to just do the specific tasks you mention, but to build the whole bike, that sounds fair.
If I were trying to make a living at it, I'd charge £100 too.

Get another quote from somewhere else, if it compares and you're willing to pay it, it's reasonable
Cost me £25 last week to have a BB re-threaded (which TBH I thought was a bit OTT for 15 mins work), but for the other £75 you could buy the tools required to fit the BB & headset yourself and still have change.
BTW - Wrapping a bar, do you really need to pay someone to do that for you???
LBS's are also local businesses not charities!
2 hours is a reasonable time to build a bike from scratch IMO with new parts - used parts, takes longer.
